Beetroot is one of the vegetable with low calories and rich in folic acid. It is one of the nutritious vegetable. Not everyone is fond of this beetroot vegetable but it is really good for health. Below is a very simple recipe using beetroot.
Ingredients: Beetroot Mustard seeds Urad dal Curry leaves Red chilli Coconut [optional] Salt
Method: Heat oil in a pan, add mustard seeds and urad dad. When it sputters add curry leaves and dried red chillis. Add the grated beetroot with little water and salt. Cover it with lid. Cook until beetroot is cooked well. Finally, add grated coconut. Coconut is optional.
Serve with rice as side dish or chappathi.
